Instructions...(for making char siu bun)*Meat*
350 gm Char Siu (diced)3 tbsp fried sesame seed3 shalllots, choped1 tbsp oil--------------------------
*Sauce*1/2 cup of water1 tbsp soy sauce1 tbsp oyster sauce1/2 tbsp thick soya sauce3 tbsp sugar
1 tbsp tapioca flour*1 tbsp cornflour*1/2 tbsp plain flour* * = mixed for thickening ---------------------------
*Instructions*
~Heat up the pan.~At one side, mix well the sauce and the flour.~Pour in oil, heat it up. (Avoid using too much oil.)~Stir fry the shallot, you may also add garlic if you wish~Pour in the mixed sauce and stir, turn down the heat so you won't burn it~As you are stirring, the mixture will become thicker.~If you make Char Siu pau very often, you may cook more sauce and keep it in the fridge for later use.~Now, you may turn off the heat and allow it to cool down.~Add in the roasted meat (After the sauce has cooled down)*If you have no time, you can just add in the Char Siu.~The sauce will make your filling moist after steaming.~Let the meat cool down and place it in the fridge. Easier when wrapping and steaming.~you may now add in the sesame seeds and allow it to cool down.~Put it in the fridge to chill so that it will turn harder.~And easier to work with.>Take out the dough.> Cut some and leave the rest well covered, so it will not turn dry.
